Slow Roasted Tomatoes

Ingredients

4-6 tomatoes
2 tablespoons olive oil
Sea salt

Wash and dry the tomatoes and cut them in half. On a baking tray, place the tomatoes, cut side down and sprinkle with sea salt. Drizzle olive oil over the tomatoes and roast them in a moderately hot oven for 40-50 minutes. Serve the roasted tomatoes in a platter, garnished with a few mint sprigs.

Roasted Cauliflower With Parmesan

Ingredients

A medium –sized cauliflower, cut into florets
1 tablespoon olive oil
¼ cup Parmesan cheese, grated
1 teaspoon fresh thyme, chopped
½ teaspoon dried rosemary
2 tablespoons freshly chopped coriander
½ teaspoon freshly ground black pepper
Salt, to taste

In a baking tray add the cauliflower florets and drizzle with olive oil, dried rosemary, salt and black pepper. Bake the cauliflower in a moderately hot oven for 20-25 minutes, until the cauliflower is cooked through and is tender. Remove baking tray from oven and add fresh thyme, coriander and grated Parmesan. Mix well and bake in the oven for 3-4 minutes until the cheese melts. Serve immediately.

Steamed Green Beans With Balsamic Vinegar

Ingredients

500g green beans
2 cloves garlic, minced
1 onion, sliced thinly
1 tablespoon balsamic vinegar
1 tablespoon vegetable oil
Salt, to taste
½ teaspoon freshly ground black pepper

Blanch the green beans in water for 2-3 minutes and keep them aside. In a medium-sized pan heat the oil and add the minced garlic and sliced onions. Fry until the onions are golden brown in color. Now add the blanced green beans along with salt, pepper and balsamic vinegar. Cook for a further 2-3 minutes and serve hot.

Spicy Mashed Sweet Potatoes

Ingredients

2 cups of sweet potatoes, peeled and diced
½ teaspoon paprika
1 teaspoon cayenne pepper
1 tablespoon butter
1 tablespoon honey
1 tablespoon olive oil
Salt, to taste

Grease a baking tray with a bit of oil and place the diced sweet potatoes on it. Drizzle the potatoes with olive oil, season with salt and bake in a hot oven for around 1 hour until the potatoes are tender. Remove sweet potatoes from tray and transfer to a large bowl. Add cayenne pepper, paprika, butter and honey. Mash the potatoes with a fork and mix all the ingredients together. Taste and adjust seasonings. Serve this spicy mashed sweet potato in a large bowl.

Sweet Roasted Butternut Squash

Ingredients

500g butternut squash, diced
2 tablespoons olive oil
½ teaspoon black pepper
½ cup brown sugar
Salt, to taste

Grease a baking tray with oil and place the diced butternut squash over the tray in a single layer. Sprinkle the butternut squash with salt, pepper and half the brown sugar. Roast in a hot oven for about 6-7 minutes, until the sugar melts and caramelizes. Next, remove the tray from the oven, turn the butternut squash over and sprinkle with the rest of the brown sugar. Roast for 15-20 minutes, till the squash is cooked through and tender. Serve the roasted butternut squash in a platter.
