Bubble And Squeak Cakes

Bubble And Squeak Cakes

Serves – 8
Takes – 20 minutes
Make – 10 minutes

Required Appliances

1 frying pan
1 mixing bowl

Ingredients

Potatoes – 500g, boiled and mashed
Cooked vegetables of choice – 300g (carrots, sprouts, cabbage) cut into pieces
Garam masala – 1 tsp
Mustard – 1/2tsp
Black pepper – ½ tsp
Salt
Plain flour for dipping – 4 tbsp (approx)
Oil – 2 tbsp

Method

Place the mashed potatoes into a bowl and add the cooked assorted vegetables. Lightly mash all the ingredients together. Stir in the garam masala, mustard and season with freshly ground pepper and salt. Divide the mixture into balls and flatten it out slightly to make cake shapes. Dip the cakes into the flour Heat oil in a frying pan and fry the cakes on either of the sides, for a few minutes until they turn a golden brown color. Serve these hot with some tomato ketchup or any chutney of your choice. Note: For a non–vegetarian option you can replace the potato with, any meat of your choice such as chicken mince or even beef mince.

Cook – 20 – 25 minutes

Required Appliances

1 baking tray

Ingredients

Bacon rashers – 12
Chicken / pork sausages

Method

Preheat the oven @190 degree Celsius. Extend a bacon rash using the back of a knife, and subsequently cut the rashers into half. Twirl each sausage in the middle and cut into half to make 2 small sausages. Wrap a piece of bacon around each one making sure there is some overlap. Place the sausages into a baking tray, with the overlap side down. Roast for around 20-25 minutes turning intermittently, until golden.

Celebration Chocolate And Cherry Brownies

Chocolate And Cherry Brownies

Makes – 16
Preparation time -10 minutes
Cooking time – 1 hour 5 minutes

Required Appliances

1 cake tray
1 mixing bowl
1 double boiler
1 hand blender

Ingredients

Dark chocolate – 100g, chopped
Softened butter – 100g, plus extra for greasing
Light soft brown sugar – 200g
Eggs-2
Plain flour -100g
Fresh cherries – 150g, pitted and halved

Method

Preheat the oven @180 degree Celsius. Lightly butter and line a square cake tin. Put the dark chocolate in a double boiler for about 5 minutes, until it is melted and let this mixture cool a little. Place the butter and sugar in a bowl and beat with a hand blender, until it is light and pale.

Gently beat in the eggs one by one, once this is well mixed, add the flour and the melted dark chocolate and mix this until the mixture is smooth. Fold in the halved cherries in to the mixture and ensure that it’s well integrated. Pour the mixture into the lined baking tin and bake for an hour. Allow the brownie to cool completely in the tin, before turning it out and cutting it out into 16 squares.
