Have you ever been thrown in a situation when the weather was bad, your household help did not turn up, your children’s school bus could not come because it had developed some last minute snag and to top it all, a sudden phone call from one of your outstation friends informed you that they were coming to your town and hence to your home for dinner.

Sounds crazy? Yes, it does but it is true as it happened with me last week. I was totally on my tenterhooks but somehow I managed. I made my job relatively easier by preparing some easy recipes for dinner. Here they are for your rescue too!!!

Macaroni Salad

Macaroni Salad

For making this tasty and filling starter, I always keep salad dressing or sandwich spread handy in my refrigerator. Take two cups of macaroni and boil them al dente. Sieve and run through cold water and keep aside.

Finely chop one capsicum, one peeled cucumber and 50 gm of cottage cheese. Mix together cheese, capsicum, cucumber, macaroni, sandwich spread or salad dip and some tomato sauce, salt and black pepper powder for taste. Keep in refrigerator for some time before serving.

Corn Chaat

Take two cups of frozen American corn. Pressure cook them till one whistle (add half cup water in the cooker). Quickly turn off the gas otherwise they will become tender and soggy.

Sieve them and add chopped green chilies, capsicum, onion and a table spoon of butter in hot corns. Also add salt, black pepper powder and chaat masala according to your taste. Serve hot.

Potato Rolls

Boil 4-5 medium sized potatoes. Peel and mash them and keep them aside. Take one tablespoon of poha (flattened rice), run it through water and sieve it. Drain out excess water. Add this poha to potatoes. Add some chopped green chilies, onions and grated ginger, salt and black pepper powder for taste.

If you find the consistency of potato mash too watery then add some more wet poha to it. Check the seasoning. Make small coin sized rolls from hands and keep them in fridge for 30 minutes. This helps in making them crisp. Deep fry till golden brown and serve hot. You can also make these rolls without adding ginger, onion and chilies. It is easy to make and still a delicious starter.

Stir Fried Vegetables

Stir Fried Vegetables

Chop capsicum, carrots, beans, and onion in elongated shape. Finely chop some garlic cloves. You can also add cottage cheese cubes. Take some oil in a pan and fry onions till translucent. Add garlic and fry for a minute.

Now add all the vegetables and fry on high flame. Add salt and black pepper. Fry for one minute and then toss cheese cubes, soya sauce, tomato sauce and white vinegar. Serve hot.

Yogurt Dip

Yogurt Dip

Take some thick yogurt. Otherwise hang the curd in a fine muslin cloth for two hours so that you may get totally thick curd. Add paste made of 4 garlic cloves in the curd and a tablespoon of mix vegetable soup base. You can take mix vegetable soup base produced by Knorr soups. Mix them will. Your tasty and crunchy salad dip is ready. You can serve this with chips and tortillas too.
